Our newest batch of French Green Lentils are grown on an organic farm tended by John Finnie near Kenton Manitoba, and are cleaned in our mill in Lundar. These are whole lentils, and a beautiful mottled blue/green colour – they look like miniature planet earths! They take a bit longer to cook than a split lentil, but the wait is worth it. One of our favourite recipes is posted here, and there are piles of other recipes shared on the “Winter Grain CSA” facebook group. These lentils are grown on a farm that also grows gluten crops, so they may not be suitable for those with celiac disease or who have a severe gluten intolerance (trace amounts of wheat may be present in the final product).
