French Green Lentil Dahl with Naked & Wild Rice

Lentil Dahl
 2 tbsp coconut or olive oil
 1 diced onion
 23 cloves of garlic
 1 tbsp peeled and grated ginger
 1 tsp cumin powder
 1 tsp coriander powder
 1 tbsp curry powder
 1 tsp red pepper flakes
 1 ½ cups vegetable stock or water
 1 cup local French green lentils
 1 can (398 ml) of coconut milk
 2 cups butternut squash or potatoes, peeled and cubed into 1 inch squares
 12 tsp honey
 1 tsp sea salt
Optional Toppings:
 cashews
 plain yoghurt
 cilantro
Naked & Wild Rice
 1 cup Naked & Wild Rice Blend
 2 ½ cups water

Naked & Wild Rice

Add Rice Blend.

Bring water to a boil.

Cover, reduce heat, and simmer for 30 minutes.

Melt oil in a large pot over medium heat.

Add onion, saute for 3-5 minutes.

Add ginger, garlic, cumin, coriander, curry and red pepper flakes. Saute for 3 minutes more.

Pour in broth.

If using a pressure cooker, or Instant Pot:

Bring to a boil, then reduce heat to low.

Cover pot with lid and bring to high pressure. Cook for 12 minutes.

Release the pressure and open the lid. Add greens and cilantro.

Season with salt and pepper. Garnish with your choice of toppings, and serve with Wild & Naked Rice Blend.

Add lentils, then simmer uncovered while stirring occasionally until lentils are tender. Roughly 30 minutes.

Open the lid and add greens and cilantro.
