These No Bake Chocolate Cookies are a fun snack for hot days when you don’t want to start up the oven, and can also work for camping just so long as you don’t mind eating them when they’re still a bit soft (in part because you probably need a cold day or a fridge for them to entirely set, and in part because after a day of being outside who can wait for them to cool down anyways?).
Ingredients:
2 cups white sugar
1/2 cup milk
1 teaspoon vanilla (optional)
1/2 cup butter
1/2 cup cocoa
1 cup coconut
3 1/2 cups Rolled Naked Oats
Directions:
Heat sugar, milk, optional vanilla, and butter to boil.
Boil for 3 minutes and then remove from heat.
Mix in remaining ingredients.
Drop by spoonful onto ungreased waxed paper
Let cool in the fridge before eating (really?)
For a easy camping dessert, premix the sugar and 2 tbsp of milk powder in a ziplock and premix the cocoa, coconut and rolled oats in a separate ziplock. To prepare, add 1/2 cup water to the sugar mixture, omit the vanilla, and substitute either margarine or oil for the butter. The rest is easy peasy, and you can either form them into cookies on plates, on the bottom of your canoe (yup), or eat it straight from the pot when no one’s looking!
